Massaman Curry Fried Potatoes

What is massaman curry?

Traditionally, massaman curry is a coconut curry served with chicken or beef, and potatoes, onions, and carrots. Similar to red curry, massaman curry paste uses dried chili peppers, cilantro seeds, lemongrass, galangal, white pepper, shallots and garlic. However, massaman curry adds spices like cardamom, cinnamon, cloves, cumin, bay leaves, and nutmeg brought from Middle Eastern merchants. With potatoes and coconut milk, the original curry is definitely hearty and rich, but this recipe gives you the same amazing flavors of massaman curry but potatoes step back a notch with half the calories.

Typically you can find red curry paste at most grocery stores, however I recommend making a trip to the Asian grocery store — you can find the exact type of curry paste you need and they are much more flavorful and more authentic. My personal favorites I will vouch for time and time again are Maesri or Arroy D brands.

However if you are only able to find red curry paste, you can easily make your own curry paste by adding some spices to 2 tablespoons of red curry paste in this recipe.

  • 1/4 teaspoon cumin
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves

How to make massaman potatoes

Slice the potatoes in half lengthwise. Then place the cut side down and slice into thin half-moon shapes.


Heat up a wok or large frying pan to medium-high heat and add the coconut oil. When the coconut oil gets hot, add the massaman curry paste and let it sizzle for 1-2 minutes to make the spices fragrant.


Add the potatoes to the pan and mix until the sauce has coated all the potatoes. Pan fry for 8-10 minutes stirring occasionally until the potatoes get nice and crispy. Then add 1 tablespoon of brown sugar and mix to combine. Fry for 2-3 minutes.


Remove the potatoes from heat and add peanuts to garnish.

  • 1 tablespoon of brown sugar or palm sugar
  • 1-2 tablespoons of peanuts finely chopped (optional)
