Ingredients

  • 2-3 tablespoons of coconut oil
  • 2 tablespoons of massaman curry paste
  • 2-3 small yellow potatoes halved
  • 1 tablespoon of brown sugar or palm sugar
  • 1-2 tablespoons of peanuts finely chopped (optional)

Instructions

  • Slice the potatoes in half lengthwise. Then place the cut side down and slice into thin half-moon shapes
  • Heat up a wok or large frying pan to medium-high heat and add the coconut oil. When the coconut oil gets hot, add the massaman curry paste and let it sizzle for 1-2 minutes to make the spices fragrant.
  • Add the potatoes to the pan and mix until the sauce has coated all the potatoes. Pan fry for 8-10 minutes stirring occasionally until the potatoes get nice and crispy. Then add 1 tablespoon of brown sugar and mix to combine. Fry for 2-3 minutes, then remove the potatoes from heat.
  • Add peanuts to garnish.
